An outstanding bright and juicy coffee filled with notes of blackcurrant, rose and papaya.
Named after producer Danilo Perez, this is a natural Caturra from La Cabana farm in El Agrado, Huila, Colombia. Huila is a region of contrasts, from steep Andean landscapes shaped by the Magdalena River valley to the cactus-filled Tatacoa area in the north. This lot uses a 120-hour anaerobic fermentation within a natural process, giving a dense, layered cup with a savoury, umami-leaning mouthfeel alongside the fruit.

La Cabaña is part of the Perez family business, Alma del Huila, based in El Agrado in Colombia’s Huila department. The project is headed by Gilberto Perez, with his son Danilo focusing on more experimental lots, particularly post-harvest work around fermentation, including naturals and anaerobic fermentations. 
Huila’s mountainous landscape and climate are influenced by the Magdalena River and the two Andes mountain ranges, with mineral-rich soils shaped by nearby volcanic geography.  At La Cabaña, the family also preserve a portion of the land as forest to help protect a local water source, and they support neighbouring growers through broader community-focused agricultural work.
