Alejandro Padilla owns a 7-hectare farm in La Copia, Cajamarca. The region’s volcanic loam soils and high rainfall provide ideal conditions for the Marshell variety, a natural Bourbon mutation first identified in 2016 by the Grimanes family. Alejandro selectively hand-picks ripe cherries, pulps them, and dry-ferments for 28 days before washing and sun-drying. His careful approach has seen Marshell lots recognised in the Cup of Excellence, often placing in the top five.
